Beef Vegetable Soup

6 beef soup bones with meat around them
3 medium carrots, sliced (optional)
4 medium potatoes, peeled and cut into chunks
1 large onion, chopped or sliced
1 large bell pepper, julienned
2 stalks celery, cut into chunks
2 medium tomatoes, peeled and chopped
salt and pepper to taste
Louisiana red pepper sauce to taste

Combine all ingredients in a large stockpot. Add enough water to cover all. Bring to a boil over medium heat. Cook 2 hours or until meat is tender. Serve over rice.
