Cabbage Rolls

1 large head of cabbage
2 quarts of water
1 small fryer, cut into pieces
1 pound ground beef
1 cup oil
3/4 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped celery
1/4 cup chopped green onion tops
3 cups cooked rice
salt and pepper to taste
Louisiana Red Hot Sauce

Core cabbage and pull leaves apart to have as many whole ones as possible. Blanch cabbage leaves in boiling water for 2-3 minutes. Remove from water and allow to cool. Be careful not to tear leaves. Boil cut up fryer pieces in water until meat is cooked. Remove from water and allow to cool. Tear meat apart from bones, set aside. Brown ground beef, onions, bell pepper and celery in oil. Add the chicken meat, green onion tops and cooked rice. Mix thoroughly. Salt and pepper to taste. Take a cabbage leaf and put the meat mixture by tablespoon to fill the leaf partially. Roll the leaf with the mixture inside to resemble a big cigar. Lay in a baking pan that has been sprayed with PAM. Stuff all the cabbage leaves. Lay in the pan, cover with foil and bake at 350 degrees for 30 minutes. When serving roll, sprinkle dabs of red hot sauce on top of each roll. If any of the stuffing is left unrolled, it can be used as a dressing or as stuffing for another dish. Serves 4.
